Salmon Ginger Soup with Pak Choi

Growing up in the Philippines where salmon is not easily accessible, this Salmon soup recipe became one of my table recipes in Ireland. Aside from the health benefit you can get, it’s quick and easy to cook and prepare. Salmon is known for being rich in Omega-3 fatty acids which is the main reason why I love this fish and would like to share this home recipe with you! :-)

Preparation time: 15 minutes

Cooking time: 30 minutes

Ingredients

  • 3 large cuts of salmon fillet
  • 250 grams pak choi
  • 700 ml water
  • 1 medium size brown onion, cut into halves
  • 5 small red cherry tomatoes, whole
  • thumb size ginger, sliced
  • 1 red chili pepper, whole
  • 60 grams of mix red, yellow, orange sweet bell pepper, cut into pieces
  • half fresh lemon, squeezed
  • 2 tsp fish sauce
  • 1 tsp soy sauce
  • salt & pepper, pinch

Cooking Procedure

  • Boil 700 ml water.
  • Throw in the onion, cherry tomatoes, ginger, red chili pepper. Let it boil for 30 seconds.
  • Add salmon and cook for 15 minutes.
  • Add the red, yellow, and orange sweet bell peppers.
  • Season with fish sauce, soy sauce, salt and pepper to taste and simmer for 5 minutes.
  • Pour in squeezed lemon juice. Add pak choi making sure the wok is covered with lid to trap the steam and simmer for another 5 minutes.
  • Serve hot with rice and enjoy! :-)
